- 1/2 cup old-fashioned rolled oats
- 1/2 cup milk of choice (dairy, almond, oat, or soy)
- 1/4 cup plain Greek yogurt (or dairy-free alternative)
- 1 teaspoon chia seeds
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
- 1/2 medium apple, finely chopped
- A pinch of salt
- Optional: chopped walnuts or pecans for topping
Instructions
- In a mason jar or a sealable container, add the rolled oats, chia seeds, ground cinnamon, and a pinch of salt. Stir them together briefly to ensure the spices are evenly distributed through the oats.
- Pour in your chosen milk, Greek yogurt, maple syrup, and vanilla extract. Use a spoon to stir the mixture thoroughly, making sure there are no dry clumps of oats at the bottom of the container.
- Add the finely chopped apples to the mixture. Gently fold them in so they are submerged in the liquid. This allows the apples to slightly soften and release their natural sweetness into the oats overnight.
- Seal the container with a lid and place it in the refrigerator. Let the oats soak for at least 6 hours, though overnight is best for the creamiest texture. In the morning, give it a quick stir, add your favorite toppings, and enjoy!
