  • 2 large ripe avocados
  • 4 small to medium eggs
  • 1/4 cup crumbled feta cheese
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon fresh chives or parsley, chopped
  • Salt and freshly ground black pepper to taste
  • Olive oil for drizzling

Instructions

  1. Step 1: Preheat the Oven

    Preheat your oven to 400°F (200°C). While the oven is heating up, line a small baking sheet with parchment paper or lightly grease a baking dish that fits the avocados snugly to prevent them from rolling.

  2. Step 2: Prepare the Avocados

    Slice the avocados in half lengthwise and remove the pits. Use a spoon to scoop out about one tablespoon of the avocado flesh from the center of each half. This creates a larger “well” to ensure the egg fits without overflowing.

  3. Step 3: Secure and Season

    Place the avocado halves on the prepared baking sheet. If they are tilting, you can slice a tiny sliver off the bottom of the avocado skin to create a flat base. Lightly drizzle the avocado flesh with olive oil and sprinkle with a pinch of salt and pepper.

  4. Step 4: Add the Eggs and Feta

    Crack one egg into each avocado hole. If the eggs are very large, you may want to pour the white in slowly to avoid a mess. Top each egg generously with the crumbled feta cheese and a pinch of red pepper flakes.

  5. Step 5: Bake to Perfection

    Place the baking sheet in the oven and bake for 15 to 18 minutes. For a runny yolk, 15 minutes is usually perfect. If you prefer a fully set yolk, leave them in for closer to 20 minutes.

  6. Step 6: Garnish and Serve

    Remove from the oven and let them cool for a minute. Sprinkle with fresh chives or parsley. Serve immediately while the cheese is warm and the avocado is creamy.
