  1. Step 1: Mix the Dry Ingredients: In a medium-sized saucepan, whisk together the granulated sugar, all-purpose flour, and salt. Mixing these while dry helps prevent lumps from forming once you add the liquid ingredients.
  2. Step 2: Combine Milk and Yolks: In a separate small bowl, whisk the egg yolks until they are smooth. Slowly whisk in the milk until combined. Gradually pour this mixture into the saucepan with the sugar and flour, whisking constantly to create a smooth base.
  3. Step 3: Cook the Pudding: Place the saucepan over medium heat. Cook the mixture while stirring continuously with a whisk or wooden spoon. Continue cooking for about 10 to 12 minutes, or until the mixture thickens enough to coat the back of a spoon. Do not let it come to a hard boil.
  4. Step 4: Add Vanilla and Cool: Remove the pan from the heat and stir in the vanilla extract. Let the pudding sit for about 5 minutes to cool slightly before you begin the assembly process. This prevents the bananas from turning mushy immediately.
  5. Step 5: Layer the Dessert: In a 2-quart serving dish or glass bowl, place a single layer of vanilla wafers on the bottom. Top the cookies with a layer of sliced bananas. Pour about one-third of the warm pudding over the bananas, spreading it evenly to the edges.

Cover the dish with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming. Refrigerate for at least 4 hours or overnight.
