  • 1 pound ground breakfast sausage (mild or spicy)
  • 8 large eggs
  • 2 cups whole milk
  • 1 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 cups white or brioche bread, cut into 1-inch cubes
  • 2 cups shredded sharp cheddar cheese
  • 1/4 cup fresh chives or green onions, chopped (optional for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or non-stick cooking spray to ensure the casserole doesn’t stick to the sides.
  2. Place a large skillet over medium-high heat. Add the ground sausage and cook until it is completely browned and crumbled. Drain off any excess grease and set the meat aside to cool slightly.
  3. Place the cubed bread into the bottom of the prepared baking dish in an even layer. Sprinkle the cooked sausage evenly over the top of the bread cubes. Follow this by sprinkling 1.5 cups of the shredded cheddar cheese over the sausage.
  4. In a large mixing bowl, whisk together the eggs, milk, dry mustard, salt, and pepper until the mixture is smooth and well-combined. Ensure the egg yolks are fully broken and integrated into the milk.
  5. Pour the egg mixture slowly over the bread, sausage, and cheese in the baking dish. Press down lightly with a spatula to make sure all the bread is submerged. Sprinkle the remaining 1/2 cup of cheese on top. Bake for 40 to 45 minutes, or until the eggs are set and the top is golden brown. Let it rest for 5 to 10 minutes before slicing.
