  • 1 large egg plus 1 egg yolk, room temperature
  • 1 tablespoon vanilla extract

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 medium Granny Smith apples, peeled and diced into small chunks

Instructions

  1. Step 1: Brown the Butter: Place the butter in a medium saucepan over medium heat. Melt the butter, then continue to cook, whisking constantly. The butter will foam up and then develop small brown bits at the bottom. Once it smells nutty and looks amber in color, remove it from the heat immediately and pour it into a large mixing bowl to cool for 10 minutes.
  2. Step 2: Prepare Oven and Pan: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan with butter or line it with parchment paper, leaving an overhang on the sides for easy removal later.
  3. Step 3: Mix the Sugars and Fats: Add the brown sugar and granulated sugar to the cooled brown butter. Whisk until well combined and smooth. Add the egg, egg yolk, and vanilla extract, whisking vigorously for about a minute until the mixture looks glossy.
  4. Step 4: Combine Dry Ingredients: In a separate bowl, whisk together the flour, cinnamon, salt, and baking soda. Gradually fold the dry ingredients into the wet ingredients using a spatula. Mix just until no streaks of flour remain; do not overmix, or the blondies will become tough.
  5. Step 5: Fold in the Apples: Gently fold the diced apple chunks into the batter until they are evenly distributed. The batter will be quite thick, which is normal.
  6. Step 6: Bake the Blondies: Spread the batter evenly into the prepared baking pan. Bake for 30 to 35 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with just a few moist crumbs. Let them cool completely in the pan before slicing into squares.
