- 2 cups all-purpose flour
- 2 tablespoons granulated sugar

- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups buttermilk (well-shaken)
- 2 large eggs
- 1/4 cup unsalted butter, melted and slightly cooled
- 1 teaspoon pure vanilla extract
- Extra butter or oil for greasing the pan
Instructions
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
- In a separate medium bowl, beat the eggs lightly. Whisk in the buttermilk, melted butter, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients. Use a spatula or wooden spoon to gently fold the mixture together. Mix only until the flour streaks disappear; it is perfectly fine if the batter remains slightly lumpy.
- Let the batter sit for about 5 to 10 minutes.
- Heat a large non-stick skillet or griddle over medium heat. Lightly coat the surface with a small amount of butter or vegetable oil.
- Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set and dry, about 2 to 3 minutes. Flip carefully with a spatula and cook the other side until golden brown, about 1 to 2 minutes more.
