- 1 pint cherry or grape tomatoes (about 20–24 tomatoes)
- 8 oz fresh mozzarella pearls or small bocconcini balls
- 1 large bunch fresh basil leaves
- 2 tablespoons balsamic glaze
- 1 tablespoon extra virgin olive oil
- Kosher salt and freshly cracked black pepper to taste
- 20–24 wooden toothpicks or small bamboo skewers
Instructions
- Wash the cherry tomatoes and the fresh basil leaves under cold water. Pat them completely dry with a paper towel. If your mozzarella pearls are packed in water, drain them and pat them dry as well to prevent the skewers from becoming soggy.
- Take a toothpick and slide on one cherry tomato. Fold a medium-sized basil leaf in half or thirds and slide it onto the toothpick next. Finish by sliding on one mozzarella pearl. Repeat this process until all ingredients are used, placing the finished skewers on a large serving platter.
- Just before serving, drizzle the extra virgin olive oil evenly over the assembled skewers. Follow with a generous drizzle of the balsamic glaze. Sprinkle a pinch of kosher salt and a few cracks of black pepper over the top to enhance all the fresh flavors.
