Ingredients

  • 12 cherry tomatoes (red or multi-colored)
  • 12 fresh mozzarella pearls or small bocconcini balls
  • 12 large fresh basil leaves
  • 2 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil
  • A pinch of sea salt
  • A pinch of freshly cracked black pepper
  • 12 wooden or bamboo skewers (4-inch size works best)

Instructions

  1. Step 1: Prepare the Ingredients: Wash the cherry tomatoes and fresh basil leaves thoroughly. Pat them dry with a paper towel to ensure the oil and glaze stick properly. If your mozzarella balls are sitting in liquid, drain them well and pat them dry as well.
  2. Step 2: Assemble the Skewers: Take a skewer and slide on a cherry tomato. Next, fold a basil leaf in half or thirds and slide it onto the skewer. Finally, add a mozzarella ball to the end. You can also vary the order by placing the basil between the tomato and the cheese for a nice color contrast.
  3. Step 3: Season and Drizzle: Arrange the completed skewers on a serving platter. Lightly drizzle the extra virgin olive oil over the skewers, then follow with a generous drizzle of the balsamic glaze. Sprinkle with a pinch of sea salt and freshly cracked black pepper just before serving.
