  • 1.5 lbs Sirloin or Ribeye steak, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 45 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Start by patting the steak cubes dry with a paper towel. This is crucial for getting a good sear. In a medium bowl, toss the steak cubes with salt, black pepper, and onion powder until every piece is evenly coated.
  2. Heat the olive oil in a large skillet over high heat until it is shimmering. Add the steak bites in a single layer, making sure not to overcrowd the pan (work in batches if necessary). Let them sear undisturbed for about 2 minutes to get a nice crust, then flip and cook for another 2 minutes until they reach your desired level of doneness.
  3. Reduce the heat to medium and add the butter to the skillet. Once melted, stir in the minced garlic and dried oregano. Toss the steak bites continuously for 1 to 2 minutes so they are fully coated in the fragrant garlic butter. Remove from heat immediately to prevent the garlic from burning.
  4. Transfer the steak bites to a serving platter and pour the remaining garlic butter from the pan over the top. Sprinkle with fresh chopped parsley for a pop of color and freshness. Serve immediately while hot.
