- 1.5 lbs Sirloin or Ribeye steak, cut into 1-inch cubes
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4–5 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Start by patting the steak cubes dry with a paper towel. This is crucial for getting a good sear. In a medium bowl, toss the steak cubes with salt, black pepper, and onion powder until every piece is evenly coated.
- Heat the olive oil in a large skillet over high heat until it is shimmering. Add the steak bites in a single layer, making sure not to overcrowd the pan (work in batches if necessary). Let them sear undisturbed for about 2 minutes to get a nice crust, then flip and cook for another 2 minutes until they reach your desired level of doneness.
- Reduce the heat to medium and add the butter to the skillet. Once melted, stir in the minced garlic and dried oregano. Toss the steak bites continuously for 1 to 2 minutes so they are fully coated in the fragrant garlic butter. Remove from heat immediately to prevent the garlic from burning.
- Transfer the steak bites to a serving platter and pour the remaining garlic butter from the pan over the top. Sprinkle with fresh chopped parsley for a pop of color and freshness. Serve immediately while hot.
