- 2 packets (approx. 14g) of unflavored beef gelatin powder
- 1/2 cup cold water
- 1 1/2 cups boiling water
- 2 tablespoons fresh lemon or lime juice
- 1–2 teaspoons of natural sweetener (like Stevia or Monk Fruit)
- Optional: A few drops of natural vanilla or fruit extract
Instructions
- Step 1: Bloom the Gelatin. Pour the 1/2 cup of cold water into a medium-sized heat-proof bowl. Sprinkle the unflavored gelatin powder evenly over the surface of the water. Let it sit for about 2 to 3 minutes until it becomes thick and spongy. This process is called “blooming” and ensures a smooth texture.
- Step 2: Dissolve with Hot Water. Carefully pour the 1 1/2 cups of boiling water over the bloomed gelatin. Use a whisk or a large spoon to stir the mixture constantly for about 2 minutes. Make sure all the gelatin granules are completely dissolved and the liquid is clear.
- Step 3: Add Flavor and Sweetener. Stir in the fresh lemon juice, your chosen natural sweetener, and any optional extracts. Give it a quick taste to ensure the sweetness level is to your liking. Remember that the flavors will become slightly more muted once the gelatin is cold and set.
- Step 4: Pour and Set. Pour the mixture into individual ramekins or a shallow glass dish. Remove any air bubbles from the surface with a spoon if you want a crystal-clear look. Place the containers in the refrigerator for at least 3 hours, or until the gelatin is firm to the touch.
- Step 5: Slice and Serve. If you used a large shallow dish, cut the gelatin into cubes once it is fully set. If you used ramekins, you can eat them directly from the bowl or dip the bottom of the dish in warm water for a few seconds to unmold them onto a plate.
