- 1 ¾ cups whole wheat flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- ⅓ cup melted coconut oil or extra-virgin olive oil
- ½ cup maple syrup or honey
- 2 eggs, at room temperature
- 1 cup mashed ripe bananas (about 2–3 medium bananas)
- ¼ cup milk of choice or water
- 1 teaspoon vanilla extract
- Optional: ½ cup chopped walnuts, pecans, or dark chocolate chips
Instructions
- Step 1: Preheat and Prep. Preheat your oven to 325°F (165°C) and grease a 9×5-inch loaf pan with a little oil or line it with parchment paper for easy removal.
- Step 2: Whisk the Wet Ingredients. In a large mixing bowl, beat the melted oil and maple syrup together with a whisk. Add the eggs and beat well, then stir in the mashed bananas, milk, and vanilla extract until well combined.
- Step 3: Add Dry Ingredients. Add the baking soda, salt, and cinnamon to the bowl and whisk to incorporate. Gently stir in the whole wheat flour using a large spoon or spatula. Mix just until combined; some lumps are okay. If you are using nuts or chocolate chips, fold them in now.
- Step 4: Bake the Loaf. Pour the batter into your prepared loaf pan and smooth the top. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts browning too quickly, you can loosely cover it with foil halfway through.
- Step 5: Cool and Slice. Let the bread cool in the pan for at least 10 minutes. Transfer the loaf to a wire rack to cool completely before slicing. This helps the structure set so it doesn’t crumble.
