- 2 medium chicken breasts (approx. 10 oz), sliced or cubed
- 2 cups Romaine lettuce, chopped
- 1/4 cup shredded Parmesan cheese
- 1/4 cup plain Greek yogurt (non-fat)
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/2 teaspoon Worcestershire sauce
- Salt and black pepper to taste
- Optional: 1/4 cup whole-grain croutons
Instructions
- Step 1: Cook the Chicken – Season the chicken breasts with salt and pepper. Heat a non-stick skillet over medium heat and cook the chicken for about 5-6 minutes per side until fully cooked through and golden brown. Once done, let it rest for a few minutes before slicing it into strips or small cubes.
- Step 2: Prepare the Healthy Caesar Dressing – In a small bowl, whisk together the Greek yogurt, lemon juice, Dijon mustard, minced garlic, and Worcestershire sauce. Add a pinch of black pepper and stir until the mixture is smooth and creamy. If the dressing is too thick, add a teaspoon of water to reach your desired consistency.
- Step 3: Toss the Salad Base – In a large mixing bowl, combine the chopped Romaine lettuce, shredded Parmesan cheese, and the sliced chicken. Pour the prepared Greek yogurt dressing over the mixture and toss well until everything is evenly coated.
- Step 4: Assemble the Wraps – Lay the tortillas flat on a clean surface. Divide the chicken Caesar mixture evenly between the two tortillas, placing it in the center. If you are using croutons, sprinkle them on top now for an extra crunch.
- Step 5: Fold and Serve – Fold in the sides of the tortilla, then roll it up tightly from the bottom. If desired, you can place the wraps back in a dry skillet for 1-2 minutes per side to toast the outside. Slice in half diagonally and serve immediately.
