  • 2 tablespoons apple brown sugar syrup (1/2 cup apple juice, 1/2 cup brown sugar, 1/4 tsp cinnamon simmered together)
  • 1 cup ice cubes
  • 3/4 cup creamy oat milk
  • 2 shots of espresso (or 1/2 cup strong brewed coffee, chilled)
  • A pinch of ground cinnamon or apple pie spice for garnish
  • Optional: Caramel drizzle

Instructions

  1. In a small saucepan over medium heat, combine apple juice, brown sugar, and cinnamon. Bring the mixture to a gentle simmer, stirring occasionally until the sugar has completely dissolved. Let it simmer for about 5 to 8 minutes until it slightly thickens into a syrup. Remove from heat and let it cool completely before using.
  2. Take a tall glass and drizzle two tablespoons of the cooled apple brown sugar syrup into the bottom. If you want an extra decadent drink, you can also drizzle a little bit of caramel sauce around the inside walls of the glass.
  3. Fill your glass almost to the top with ice cubes. Pour the oat milk over the ice, leaving about an inch of space at the top of the glass for the coffee. You will see the milk settle into the syrup at the bottom.
  4. Slowly pour your two shots of espresso (or strong coffee) over the oat milk. Because of the different densities, the espresso will sit near the top and slowly swirl downward, creating the classic “macchiato” look. Top the drink with a sprinkle of ground cinnamon or apple pie spice.
