  • 1 lb loaf of Brioche or Challah bread, cut into 1-inch cubes
  • 2 cups fresh mixed berries (blueberries, raspberries, and strawberries)
  • 6 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/3 cup maple syrup or honey
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons brown sugar (for topping)
  • Butter for greasing the pan

Instructions

  1. Start by preheating your oven to 350°F (175°C). Generously grease a 9×13 inch baking dish with butter. Cut your bread into bite-sized cubes and spread half of them evenly across the bottom of the prepared dish. Scatter half of the mixed berries over the bread layer.
  2. In a large mixing bowl, whisk together the eggs, milk, heavy cream, maple syrup, vanilla extract, cinnamon, nutmeg, and salt. Whisk vigorously until the mixture is completely smooth and the eggs are fully incorporated into the liquid.
  3. Add the remaining bread cubes on top of the first layer. Pour the egg mixture evenly over the entire dish, ensuring every piece of bread gets moistened. Use a spatula to gently press down on the bread to help it absorb the liquid. Scatter the remaining berries on top and sprinkle with brown sugar.
  4. Place the dish in the oven and bake for 45 to 50 minutes. The bake is ready when the top is golden brown and the center is set but still slightly springy to the touch. If the top browns too quickly, you can cover it loosely with foil for the last 10 minutes of baking.
  5. Remove the dish from the oven and let it rest for at least 5 to 10 minutes before serving. This allows the custard to set fully, making it easier to slice and serve beautiful portions.
