- 1 cup old-fashioned rolled oats
- 1/2 cup creamy natural peanut butter
- 1/3 cup honey or pure maple syrup
- 1/2 cup mini semi-sweet chocolate chips
- 1/2 cup ground flaxseed or chia seeds
- 1 teaspoon pure vanilla extract
- 1/8 teaspoon sea salt
Instructions
- Step 1: Combine the Dry Ingredients. In a large mixing bowl, add the rolled oats, ground flaxseed, and mini chocolate chips. Stir them together until the ingredients are evenly distributed throughout the bowl.
- Step 2: Add the Wet Ingredients. Pour in the creamy peanut butter, honey, and vanilla extract. If you like a sweet and salty combination, add a tiny pinch of sea salt at this stage to enhance the peanut butter flavor.
- Step 3: Mix Thoroughly. Using a sturdy spatula or a wooden spoon, stir the mixture until it is well combined. The dough should be slightly sticky and hold together when you press it between your fingers.
- Step 4: Roll into Balls. Scoop out about one tablespoon of the mixture at a time. Use your hands to roll the dough into balls roughly one inch in diameter. You should be able to make about 12 to 14 balls depending on the size.
- Step 5: Chill to Set. Place the energy balls on a parchment-lined plate or tray. Refrigerate them for at least 30 minutes. This allows the oats to soak up some of the moisture and ensures the balls firm up properly.
