  • Total Time: 15 minutes

Ingredients

Scale
  • 1 cup old-fashioned rolled oats
  • 1/2 cup creamy natural peanut butter
  • 1/3 cup honey or pure maple syrup
  • 1/2 cup mini semi-sweet chocolate chips
  • 1/2 cup ground flaxseed or chia seeds
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon sea salt

Instructions

  1. Step 1: Combine the Dry Ingredients. In a large mixing bowl, add the rolled oats, ground flaxseed, and mini chocolate chips. Stir them together until the ingredients are evenly distributed throughout the bowl.
  2. Step 2: Add the Wet Ingredients. Pour in the creamy peanut butter, honey, and vanilla extract. If you like a sweet and salty combination, add a tiny pinch of sea salt at this stage to enhance the peanut butter flavor.
  3. Step 3: Mix Thoroughly. Using a sturdy spatula or a wooden spoon, stir the mixture until it is well combined. The dough should be slightly sticky and hold together when you press it between your fingers.
  4. Step 4: Roll into Balls. Scoop out about one tablespoon of the mixture at a time. Use your hands to roll the dough into balls roughly one inch in diameter. You should be able to make about 12 to 14 balls depending on the size.
  5. Step 5: Chill to Set. Place the energy balls on a parchment-lined plate or tray. Refrigerate them for at least 30 minutes. This allows the oats to soak up some of the moisture and ensures the balls firm up properly.
