- 3 tablespoons butter, melted

Instructions
- In a large bowl, sift together the flour, baking powder, salt, and sugar. Use a whisk to combine them thoroughly, ensuring there are no large lumps of flour or leavening agent.
- In a separate medium bowl or measuring jug, whisk the milk, egg, melted butter, and vanilla extract until the mixture is uniform and the egg is fully incorporated.
- Make a well in the center of the dry ingredients and pour in the milk mixture. Mix gently with a whisk or wooden spoon until just combined. It is perfectly okay if there are a few small lumps remaining; overmixing will lead to tough pancakes.
- Heat a lightly oiled griddle or non-stick frying pan over medium-high heat. You can test the heat by dropping a tiny bit of water on the pan; if it dances and sizzles, the surface is ready.
- Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until bubbles form on the surface and the edges look set and matte.
- Carefully flip the pancakes with a spatula and cook until the other side is golden brown. This usually takes another 1 to 2 minutes. Repeat with the remaining batter.
