  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 2 ripe peaches, diced
  • 1/2 cup Greek yogurt (plain or vanilla)
  • 1/4 cup granola
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a medium bowl or glass jar, whisk together the chia seeds, almond milk, maple syrup, and vanilla extract. Ensure there are no clumps of seeds stuck to the bottom of the container.
  2. Let the mixture sit for about 5 minutes, then give it another quick stir to prevent settling. Cover the jar and place it in the refrigerator for at least 4 hours, or ideally overnight, until it reaches a thick, pudding-like consistency.
  3. Wash and dice your fresh peaches into bite-sized pieces. If the peaches are slightly tart, you can toss them with a tiny drizzle of maple syrup to enhance their natural flavor.
  4. In two serving glasses, begin layering. Start with a generous spoonful of the set chia pudding, followed by a layer of Greek yogurt, and then a layer of diced peaches. Repeat the layers until the glasses are full.
  5. Top each parfait with a sprinkle of crunchy granola and a few extra peach slices. Garnish with a fresh mint leaf if you want an extra touch of elegance.
