- 1/4 cup black or white chia seeds
- 1 cup unsweetened almond milk (or milk of choice)
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon pure vanilla extract
- 2 large ripe peaches, pitted and diced
- 1 cup Greek yogurt (plain or vanilla)
- 1/4 cup granola for topping (optional)
- Fresh mint leaves for garnish (optional)
Instructions
- In a medium bowl or glass jar, combine the chia seeds, almond milk, maple syrup, and vanilla extract. Whisk or stir vigorously for about two minutes to ensure the seeds are well distributed and don’t clump together at the bottom.
- Cover the mixture and place it in the refrigerator for at least 4 hours, or ideally overnight. This gives the chia seeds enough time to absorb the liquid and reach a thick, pudding-like consistency. Give it one more stir after the first 30 minutes if possible.
- Once the chia pudding is set, take your fresh peaches and dice them into small, bite-sized pieces. If the peaches are very tart, you can toss them in a teaspoon of lemon juice and a pinch of cinnamon to enhance their natural sweetness.
- Take two serving glasses or mason jars. Start by spooning a layer of chia pudding into the bottom. Follow with a layer of Greek yogurt, and then a generous layer of diced peaches. Repeat the layers until the glasses are full.
- Top each parfait with a sprinkle of crunchy granola and a fresh mint leaf if desired. Serve immediately while cold for the best texture and flavor experience.
