- 1/4 cup plain Greek yogurt
- 1 teaspoon chia seeds
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- A pinch of ground nutmeg
- 1 medium peach, diced (split into two portions)
- 1 tablespoon chopped pecans (optional for topping)
Instructions
- In a mason jar or a medium-sized bowl, add the rolled oats, milk, Greek yogurt, and chia seeds. These components form the creamy base of your overnight oats.
- Stir in the maple syrup or honey, vanilla extract, ground cinnamon, and the pinch of nutmeg. Mix everything together thoroughly to ensure the spices and sweetener are evenly distributed.
- Add half of your diced peaches to the mixture. Gently stir them in so they are submerged. The juices from the peaches will mingle with the oats overnight, enhancing the cobbler flavor.
- Seal the jar with a lid or cover the bowl with plastic wrap. Place it in the refrigerator for at least 4 hours, though overnight (about 8 hours) is recommended for the best texture.
- In the morning, give the oats a quick stir. If the mixture is too thick, you can add a splash of extra milk. Top with the remaining diced peaches and the optional chopped pecans for a bit of crunch.
