- 1 cup warm milk (about 110°F)

- 1/2 cup granulated sugar
- 1/2 cup pumpkin puree (not pumpkin pie filling)
- 1/4 cup unsalted butter, melted and cooled
- 1 large egg, room temperature
- 4 cups all-purpose flour, plus extra for dusting
- 1 tsp salt
- 1 tbsp pumpkin pie spice
- For the filling: 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 2 tbsp ground cinnamon
- For the icing: 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 tsp vanilla extract
- 1 tbsp milk or cream
Instructions
- Step 1: Activate the Yeast In a large bowl or the bowl of a stand mixer, combine the warm milk and a tablespoon of the sugar. Sprinkle the yeast over the top and let it sit for about 5 to 10 minutes until it becomes foamy. This ensures your yeast is alive and ready to make the dough rise.
- Step 2: Mix the Dough Add the remaining sugar, pumpkin puree, melted butter, and egg to the yeast mixture. Whisk until smooth. Gradually add the flour, salt, and pumpkin pie spice. Using a dough hook or a sturdy spoon, mix until a soft dough forms and begins to pull away from the sides of the bowl.
- Step 3: Knead and First Rise Knead the dough on a lightly floured surface for about 5-7 minutes, or 5 minutes in the stand mixer, until it is smooth and slightly tacky but not sticky. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm spot for about 1 to 1.5 hours, or until it has doubled in size.
- Step 4: Roll and Fill Punch down the risen dough to release air. On a floured surface, roll the dough into a large rectangle, roughly 12×18 inches. Spread the softened butter over the entire surface. In a small bowl, mix the brown sugar and cinnamon, then sprinkle it evenly over the buttered dough.
- Step 5: Cut and Second Rise Starting from the long edge, roll the dough tightly into a log. Use a sharp knife or unflavored dental floss to cut the log into 12 even rolls. Place the rolls into a greased 9×13 inch baking pan. Cover and let them rise again for another 30 to 45 minutes.
- Step 6: Bake the Rolls Preheat your oven to 350°F (175°C). Bake the rolls for 22 to 27 minutes, or until they are lightly golden brown on top. Be careful not to overbake them, as you want the centers to remain soft and gooey.
- Step 7: Glaze and Serve While the rolls are baking, whisk together the cream cheese, butter, powdered sugar, vanilla, and milk until smooth. Spread the frosting over the rolls while they are still warm so that some of it melts down into the spirals.
