- 1 lb Lean ground beef
- 4 Medium flour tortillas
- 1 cup Shredded cheddar or Mexican blend cheese
- 2 tbsp Taco seasoning or a mix of salt, pepper, and garlic powder
- 1/2 cup White onion, finely diced
- 1/2 cup Dill pickle chips
- 1 cup Iceberg lettuce, shredded
- 1/4 cup Mayonnaise
- 1 tbsp Yellow mustard
- 1 tbsp Sweet pickle relish
- 1 tsp Smoked paprika
Instructions
- Step 1: Prepare the Special Sauce: In a small bowl, whisk together the mayonnaise, yellow mustard, sweet pickle relish, and smoked paprika. Set this aside in the refrigerator to allow the flavors to meld while you cook the beef.
- Step 2: Portion the Beef: Divide your ground beef into four equal portions, roughly 4 ounces each. Roll them into loose balls. Do not overwork the meat, as keeping it loose helps it get those crispy edges when smashed.
- Step 3: The Smash Technique: Heat a large non-stick skillet or griddle over medium-high heat. Place a beef ball in the center. Immediately place a flour tortilla directly on top of the beef. Using a heavy spatula or a burger press, press down firmly on the tortilla to flatten the beef into a very thin layer that covers the entire surface of the tortilla.
- Step 4: Searing the Meat: Cook for about 2 to 3 minutes without moving it. You want the beef to develop a dark brown, crispy crust. Season the back of the tortilla lightly with a pinch of taco seasoning if desired.
- Step 5: Flip and Melt: Carefully flip the entire tortilla and beef over so the beef side is facing up and the tortilla is touching the pan. Immediately sprinkle a generous amount of shredded cheese over the hot beef. Cover the pan with a lid for 30 seconds to help the cheese melt.
- Step 6: Fold and Crisp: Once the cheese is melted and the bottom of the tortilla is golden brown and crispy, remove it from the heat. Add your onions, pickles, lettuce, and a drizzle of the special sauce. Fold the tortilla in half like a taco or a quesadilla and serve immediately.
