  • 1 whole head of garlic
  • 2 tablespoons extra virgin olive oil (for roasting)
  • 8 ounces high-quality feta cheese, crumbled
  • 1/2 cup plain Greek yogurt (full fat is best)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon honey
  • 1/4 teaspoon black pepper
  • Fresh parsley or thyme for garnish
  • Additional olive oil for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves. Place it on a piece of aluminum foil, drizzle with two tablespoons of olive oil, and wrap it tightly. Roast in the oven for about 35 to 40 minutes until the cloves are soft and golden brown. Let it cool completely before handling.
  2. Place the crumbled feta cheese and Greek yogurt into a food processor. Pulse a few times to break down the feta. Adding the yogurt helps the feta break down into a smoother paste, creating that signature whipped texture.
  3. Squeeze the roasted garlic cloves out of their skins and into the food processor. Add the lemon juice, lemon zest, honey, and black pepper. Blend on high for 1 to 2 minutes. Stop and scrape down the sides as needed. Continue blending until the mixture is completely smooth and airy.
  4. Transfer the whipped feta to a shallow serving bowl. Use the back of a spoon to create swirls on the surface. Drizzle with a little extra virgin olive oil and sprinkle with fresh herbs like parsley or thyme before serving.
